Masu Sushi is a type of pressed sushi made with salted and seasoned trout.
The bottom of the wooden “wappa” is lined with bamboo grass, the salted and seasoned trout fillets are placed on the bamboo grass, the vinegared rice is pressed into the trout, the bamboo grass is folded over and wrapped, and a weight is placed on the trout.
Sounds good, doesn't it?
In the old days, a feudal lord was so pleased with the taste that he presented it to the Shogun as a specialty of Toyama, which won the praise of the then Shogun Yoshimune Tokugawa.
This is a specialty of Toyama Prefecture and is not available anywhere else.
If you ever go out to Toyama, you must try it!
