History and origin
In the days when refrigeration technology was not developed, mackerel lost its freshness very quickly, so people thought of ways to enjoy mackerel for a long time.
Saba-Sushi” was made using this salted mackerel, and a culture was born among the common people to enjoy this precious blue fish.
It is one of my favorite fish dishes.
The other day I ate a lot of grilled Yaki Saba-Sushi, a specialty of Fukui Prefecture.
One type of mackerel sushi is called Yaki Saba-Sushi, which is grilled on the surface. It is savory and very delicious.
